Sườn sụn rửa sạch, chặt miếng sau đó đem băm nhỏ. Gạo tẻ trộn với gạo nếp, đem xay hoặc giã vỡ rồi ngâm phần gạo này với ít nước lọc khoảng 1 tiếng đồng hồ (việc ngâm gạo sẽ giúp khi nấu cháo nhanh hơn).

Cho gạo vào nồi chế nước sao cho phần nước dùng xương gấp đôi phần gạo. Đun nhỏ lửa cho đến khi hạt gạo bung nở thành cháo.
Đặt nồi cháo vừa nấu lên bếp thêm phần sườn sụn vào rồi khuấy đều, nếu thấy thiếu nước thì thêm phần nước dùng xương vào đun đến khi cháo nhuyễn là được. Nêm nếm gia vị vừa miệng. Cuối cùng cho hành lá, ngò rí thái nhỏ rồi chút cháo sườn sụn ra tô, khi ăn thêm quẩy ăn kèm nhé!
