Bánh stolen là bánh thường được thấy trong Lễ Giáng sinh của người Đức. Bánh được sử dụng bột mỳ, men nâu, các hạt hoa quả khô là thành phần nguyên liệu chính.
Trong một tô trộn lớn, cho bột mì, muối, men, 30g đường và bột quế và sau đó trộn đều với nhau.
Thêm sữa tươi nấu ấm, nước cốt chanh và quả trứng vào tô bột mì và trộn cho đến khi bột mịn (khoảng 5 phút). Sau đó cắt bơ thành những miếng nhỏ vào trộn đều bơ với bột.
Cho tất cả các loại trái cây khô vào chung một cái nồi nấu cho nó nở ra, vớt ra để ráo. Vỏ chanh, cam bào sợi.
Cho phần trái cây khô đã ráo nước và vỏ cam, chanh vào phần bột vừa nhồi mịn. Dùng tay hoặc máy trộn đều hỗn hợp.
Sau khi bột đã thành một khối đồng nhất thì cho bột ra mặt phẳng có rắc một ít bột mì, dùng tay đấm bột và định hình bột thành một quả bóng rồi đặt vào tô lớn.
Dùng một bao bóng kính bọc tô lại và để bột như vậy khoảng 2-3 tiếng, đến khi bột tăng kích thước gấp đôi thì tháo bao bóng ra và đấm bột cho xẹp khí bớt, nặn thành hình như chiếc bánh mì, đặt bánh lên khay, đậy khăn lại ủ thêm 40 phút.
Mở lò sẵn ở nhiệt độ 180C, cho bánh vào nướng 10 phút rồi giảm nhiệt độ xuống 150C thêm chừng 30-40 phút nữa, bánh chín là khi châm bánh không còn dính bột ở tăm.
Đun nóng khoảng 50g bơ, lúc bánh còn hơi nóng dùng cọ phết bơ lên toàn bộ mặt bánh, sau khi phết bơ thì rắc đường bột lên phủ kín bánh. Cắt bánh từng miếng và thưởng thức.
