Cách làm bánh bao khoai lang tím: Gọt vỏ khoai lang tím, cắt thành những miếng nhỏ rồi cho vào nồi hấp khoai 15 phút. Sau đó, dằm nát khoai, sau đó rây qua rây để khoai được mịn hơn.
Chuẩn bị 100 ml nước ấm khoảng 35 độ C rồi cho đường vào hòa tan. Trộn men nở vào nước, khuấy đều và để trong 5 phút.
Cho 200g bột mì vào thau, đổ nước có men từ từ vào và khuấy đều. Sau đó nhào bột bánh bao cho đến khi mềm, mịn. Lúc đầu có thể bột sẽ hơi dính một chút.
Làm lại các bước trên, trộn 200g bột mì còn lại với khoai lang tím nghiền rồi nhào cho đến khi bột mịn.
Để cả hai phần bột bánh bao nghỉ trong 1 giờ hoặc cho đến khi bột nở lên gấp đôi. Ngắt nhỏ từng phần bột bánh bao, dùng cán bột cán mỏng hai phần bột. Lấy tấm bột tím để đè lên trên tấm bột trắng rồi từ từ cuộn chúng lại.
Dùng dao cắt cuộn bột thành các phần nhỏ. Đặt bánh vào xửng hấp, đun sôi nồi nước khoảng 15 phút cho bánh bao hấp chín. Sau đó vặn nhỏ lửa, mở nắp vung, để thêm khoảng 5 phút.
Cho bánh bao khoai lang tím ra khỏi xửng hấp và ăn nóng rất ngon. Bánh bao hấp vừa chín có vỏ bánh xốp mềm, rất thơm, dùng nhâm nhi cho bữa sáng hoặc ăn lót dạ rất tuyệt.
